Hanging weights are expected to be 30-40 lb. Space required: 1.5-2 paper grocery bags or ~2 cubic feet. You can request ‘bigger’ or ‘smaller.’ Delivery/Pick up will be in the week following New Year’s. We’ll be in touch for particulars. Price is $6.50/lb. on the hanging weight.
This is the default cut plan; unless you specify otherwise:
- Legs – 1 bone-in whole, 1 boneless butterflied
- Rib/Rack – All to chops, 1.5″ thick
- Loin – All to Chops, 1.5” thick
- Shoulder – 1 as Blade and Arm Chops, 1.5” thick; 1 as Stew Cubes
- Shanks – save all 4
- Ground – Neck, Breast, Spare Rib
- Bones – in 3” pieces for stock
- Organs – Liver & Heart
A $65 deposit reserves your lamb. Please use the “Add to Cart” button. Then “Check Out with PayPal” button will direct you to a secure link to pay your deposit online. Your balance will be calculated and due upon delivery.
Here’s a smaller commitment option. We’ll assemble a 10 pound package of mixed cuts at a bargain price. Chops and sausage and legs, oh my! A sample bundle is pictured below. It fills a paper grocery sack halfway. Contents will vary, but expect at least 4 lamb-based meals for a family of 4.
