CHICKEN RECIPES

“Here is a recipe for Lemon Broiled Chicken made famous by our late friend Steve Shreefter. We call it Steve’s Chicken.”

STEVE’S CHICKEN
2 small chickens cut up in quarters.
For Marinade: 1/2 cup lemon juice, 3 TBS. vegetable oil, 1 1/2 TBS. Dijon mustard, 1 TBS. soy sauce, 1/2 tsp. salt, 1/4 tsp. cayenne

  1. Whisk together marinade ingredients, pour over chicken in covered container and marinate for at least 2 hours, or overnight in a cool place.
  2. Broil or grill, turning and basting.
  3. Serve with scallions chopped and sprinkled over platter and lemon wedges for extra brightness.
  4. Good hot off the presses or room temperature.
