“Here is a recipe for Lemon Broiled Chicken made famous by our late friend Steve Shreefter. We call it Steve’s Chicken.”
2 small chickens cut up in quarters.
For Marinade: 1/2 cup lemon juice, 3 TBS. vegetable oil, 1 1/2 TBS. Dijon mustard, 1 TBS. soy sauce, 1/2 tsp. salt, 1/4 tsp. cayenne
- Whisk together marinade ingredients, pour over chicken in covered container and marinate for at least 2 hours, or overnight in a cool place.
- Broil or grill, turning and basting.
- Serve with scallions chopped and sprinkled over platter and lemon wedges for extra brightness.
- Good hot off the presses or room temperature.
